The purpose of the Polyoil project is to obtain an edible linseed oil with better oxidative and organoleptic stability. At the same time, it aspires to develop innovative products with high added value such as edible linseed oil that is more stable than that currently available, thanks to the addition of natural polyphenols. Two types of linseed oil are being studied: one of “first-press” quality, as it is known, and the other refined. The project is working on liposoluble polyphenol extracts that can be used for the stabilisation of linseed oil but which could also be used in other oils rich in polyunsaturated fatty acids.
