The Walnut project is carried out within the specific context of increasing overweight and obesity, to the point where the phenomenon is becoming a real problem for public health. Initiatives are growing in various countries to try and stem this “pandemic.” With some of the most progressive legislation in the European Union, Belgium has always pursued a policy that makes a vast range of food supplements and enriched food products possible. It is one of the reasons why the food industry has constantly increased the offer of food and food supplements with a high nutritional and health potential, while consumers are confronted daily with a flood of information about nutrition and its various direct and physiological effects. Nevertheless, in order to limit certain abuses, the European Commission wanted to establish rules on nutritional and health claims made for food products on the packaging or other communication channels (advertising, website, etc.).
